This was a recipe that a friend of mine from church, Danila, served to my family the first time we came for dinner. It was so delicious, I asked for the recipe. She made it up one day from items she had in her house when she didn't have something planned. It's so simple, and it has ingredients I usually have on hand, so that makes it even better. Sometimes I like to add a little red pepper flakes to my bowl.
Ingredients-1-1 1/2 lbs chicken breasts, cut into bite size pieces
-1 small onion (or 1/2 Tbsp minced dried onion, or you can leave this totally out if you prefer)
-1 clove garlic
-1 tsp olive oil
-salt & pepper to taste
-1 cup spaghetti sauce (watch your brand for allergens)
-1 cup milk, half & half, or cream (I usually use milk, but I had half & half on hand, you can either double your sauce and leave this out for dairy-free or substitute rice dream drink or soy milk... use fat free milk for heart healthy or cream for low carbDirections
Saute garlic & onion in olive oil. Add chicken, salt, & pepper. Cook chicken 3-5 minutes or until cooked through. Add spaghetti sauce & milk, bring to a boil and then simmer for 10 minutes. Serve over rice or pasta. Mrs. Danila leaves the chicken in larger pieces and uses less sauce. If you'd like to use less sauce, just use equal amounts of spaghetti sauce and milk. Also, you can add some bell pepper, mushrooms, or some other vegetable to this if you like.
If you freeze this, only freeze the chicken and sauce. Make fresh pasta or rice when you go to thaw it out and eat.
