Ingredients
1 large yellow onion, diced
3 multi-colored bell peppers, chopped
2 lbs chicken breasts, boneless skinless
4-5 garlic cloves, minced
7oz can green chilies
3 cups chicken broth
2 Tbsp chili powder
2 tsp cumin
2 tsp salt
1 tsp Xantham gum (optional)
10oz bag spinach, roughly chopped
1 1/2 cups sour cream
Directions
Throw all the ingredients in the crockpot except the sour cream. Cook 4-5 hours on high or 7-8 on low. Shred chicken and mix in sour cream.
