Original Taco Soup Crockpot Recipe

This is really similar to my Taco Mac recipe except this doesn't have macaroni. I got this recipe from the Crockpot Lady. We had it tonight, and it made a lot. It was very yummy, and I will definitely make it again. I had added a little cheese and stirred it in before I remembered to take the picture. Good news going on here is that we found out that we took Daniel to the allergist and he does not have a milk allergy! Yeah! He does have an egg allergy, a peanut allergy, and a soy allergy. But.... I found out that means he can not have the soy and peanut proteins, so he can have peanut or soybean oil or soy lecithin, so that opens up a WHOLE lot more options for him to eat! We are very excited about that! Unfortunately, he is very allergic to cats and dogs, so we are having to get rid of our 3 dogs. :-( I am very thankful for the food news though!


Ingredients


-2 cans of kidney beans

-2 cans of pinto beans

-2 cans of corn

-1 large can of diced tomatoes

-1 can tomatoes and chilies

-1 packet taco seasoning or use my homemade taco seasoning

-1 packet ranch dressing mix (leave out for dairy-free)

-1 lb browned ground turkey or hamburger (omit for vegetarian)

-shredded cheese and/or sour cream (optional for topping)Directions





-brown meat if you are going to use it, drain and put in crockpot.

-sprinkle seasoning packets on top of meat

-drain and rinse the beans and add

-add the ENTIRE contents of the corn and tomato cans and stir.




cover and cook on low for 8-10 hours or on high for 4-5. If you have the time, opt for cooking on low. Stir well, and serve with a handful of shredded cheese and a dollop of sour cream if you like.
